Miniature Cheese Cakes

Ingredients:

12 finely ground graham crackers


16 oz. cream cheese


2/3 cup sugar


3 egg yolks


3 egg whites beaten stiff


3/4 tsp. vanilla


1 cup sour cream


3 Tbsp. sugar


2 tsp. vanilla


Directions:

Butter 4 mini muffin tins heavily. Sprinkle with crushed graham cracker crumbs and shake well until tins are well coated. Cream the 2/3 cup of sugar with the cream cheese. Add 3 egg yolks and 3/4 tsp. vanilla and blend well. Fold in egg whites until well blended. Bill each tin with filling to top, do not overfill. bake for 15 minutes at 325 degrees. Remove from tins to waxed paper to cool. Stir 1 cup sour cream, 3 Tbsp. sugar and 2 tsp. vanilla together and put in 2 separate oven proof dishes. Bake for 5 minutes and remove from oven. Stir topping and drop by spoonful into cheese cake cups. Decorate with cherries, jam, chocolate, etc. Keep refrigerated or frozen until used.
