Caramel Pie

Servings: 2 pies

Ingredients:
3 cups sugar
2 T. corn starch
3 cups milk
3 T. flour
3 T. butter
5 egg yolks

4 egg whites
1/2 cup sugar

Directions:

Brown 1 cup sugar in black, cast-iron skillet.

Combine the other sugar, corn starch and flour, then stir in the rest of the ingredients in a heavy saucepan. Cook over medium heat, stirring constantly until thickened. Stir custard into browned sugar slowly, stirring constantly. Let cool slightly. Pour into 2 baked 9 inch pie crusts. Top with meringue. Bake at 350 degrees for 15 minutes.

Using 4 egg whites, beat until soft peaks form, begin adding sugar slowly until all is incorporated and still peaks are formed. Spread on top of pies. Bake.
