Coconut Delight

Servings:

Ingredients:

1 1/2 cups flour

1/4 tsp. salt

1/ 1/2 sticks butter, melted

1/2 cup chopped pecans


1 cup powdered sugar

1 8 oz. softened cream cheese

2 8 oz. Cool Whip


2 small boxes vanilla pudding mix

3 cups milk

1 cup coconut


1/2 cup toasted coconut


Directions:

Combine first 4 ingredients and press into 9X13 pan. Bake at 350 degrees for 20 minutes. Cool.
Beat powdered sugar and cream cheese till smooth. Fold in 8 oz. Cool Whip and spread on cooled crust.

Mix pudding mix and milk as directed. Stir in 1 cup coconut. Spread on top.
Spread with remaining Cool Whip and sprinkle with toasted coconut.

Keep refrigerated.
