Pan-roasted Steak

Ingredients:
New York Strip or Filet steaks
marinade of your choice:
Steak Marinade or 1/2 Moores - 1/2 papaya juice recommended
Salt and Pepper to taste

Directions:

Allow steak to rest at room temperature for 30 minutes prior to cooking. Preheat oven to 400°. Pat steaks dry with paper towels. If you choose not to use a marinade, season steaks liberally with salt and pepper. Heat an oven safe skillet (cast iron is preferable) with 1T  oil over high heat. when oil just begins to smoke, add steaks. Do not crowd the pan, use more than one if necessary. Cook the steak 1 1/2 minutes on each side then put entire pan in the oven.  Cook 8-10 minutes to desired doneness. 130°-135° for medium rare. Wrap steaks in aluminum foil and allow to rest for at least 10 minutes before serving.

Also works well with chicken and fish. Use the same technique, but use the appropriate doneness chart for the meat you are cooking.
