Fresh Cranberrry Salad w/ Dressing

Ingredients:

12 oz. fresh cranberries

1 cup sugar

1 15 oz. can mandarin oranges, drained

1 15 oz. can crushed pineapple, drained

juice of 1/2 lemon

1 1/2 c. chopped celery

1/2 c. pecans


Dressing

8 oz. cream cheese, softened

1/2 large can cranberry sauce

chopped pecans


Directions:

Wash cranberries thoroughly and sort to remove any soft ones. Chop coarsely in food processor.  Pour sugar over berries and allow to rest at room temp., covered, for 1 hour. Chop celery and assemble other salad ingredients.

When most of sugar has dissolved into cranberries, stir just to incorporate the rest of the sugar. Add the lemon juice, the drained oranges and pineapple and the chopped celery. Add pecans. Refrigerate a few hours or overnight.

Cream together cranberry sauce and cream cheese.  You may want to drain the salad before serving.  Serve with dressing.
