Mushroom Almond Rice

Servings: 6

Ingredients:

1 cup uncooked rice

1/2 cup chopped onion

4 T. butter

2 cups beef broth or bouillon

1/4 t. pepper

1 small bag sliced almonds (1/2 cup)

1 small can sliced mushrooms


Directions:

Saute onion in 2 T. butter until tender. Add rice and continue cooking until the rice is golden. Add broth and pepper. Bring to a boil. Cover and reduce heat and simmer for 15 minutes or until the liquid is absorbed. Saute almonds and mushrooms in the remaining 2 T. butter. Add to rice.
