Summer Veggie Pasta

Servings: 6

Ingredients:
1/4 c. butter

1 1/2 cups parmesan cheese

2 cloves garlic or 1 tsp. prepared

1 cup heavy cream

1/3 cup fresh basil

1/3 cup fresh parsley

1/4 cup chopped green onion

salt and pepper to taste

4 cups veggies (squash, zucchini, broccoli)as available, thinly sliced and steamed

angel hair or mini penne, cooked and drained, I use 1/2 package

2 chicken breasts grilled and thinly sliced

 

Directions:

Melt butter, add garlic and cook over med high heat until tender. Stir in cheese and cream, stirring till cheese melts. Add herbs, then steamed veggies. Stir in cooked pasta and sliced grilled chicken.

You can make this without the chicken. I usually make it when we have leftover grilled chicken breast as a way to use them and not seem like leftovers.
