Red Velvet Cake

Servings: 1 2-layer cake

Ingredients:
2 1/2 cups sifted cake flour
1/2 t. salt
3 T. Quick chocolate drink mix
1/2 cup shortening
1 1/2 cups sugar
2 eggs
2 ounces red food color
1 t. vanilla
1 cup buttermilk
1 T. white vinegar
1 t. baking soda

Directions:

Combine flour, salt and Quick. Set aside. Cream shortening and sugar thoroughly. Beat in eggs one at a time. On low speedof mixer, blend in food coloring and vanilla. Combine buttermilk, vinegar and soda. Add alternately with flour mix,blending well after each addition. Pour into two greased and waxed paper lined 9″ round cake pans. Bake at 350˚ for 30 minutes. Cool on wire racks. Frost with Mystery Frosting.
