Mandarin Orange Tossed Salad

Ingredients:
1 head leaf lettuce or romaine lettuce

3 stalks celery, thinly sliced

4 green onions, sliced

1 4 oz. can mandarin oranges, drained

Vinaigrette Dressing

Caramelized almonds

Directions:

Combine first four ingredients. Before serving toss with vinaigrette dressing. Sprinkle with almonds.

To make caramelized almonds: Combine in heavy saucepan 1/4 cup slivered almonds and 2T. sugar. Cook and stir over medium heat until golden. Spread on parchment paper and cool. Break into pieces. Store in airtight container.
