Chicken Noodle Soup

Ingredients:
4 -6 chicken breasts
8 cups water
1 medium onion, chopped
1 tsp. salt
1/4 tsp. pepper
1 bay leaf
1 cup chopped carrots
1 cup chopped celery
small package egg noodles
1Tbsp. fresh parsley

Directions:

Bring to a boil in large pot, chicken, water, onion, salt, pepper and bay leaf. Reduce heat to low and simmer, covered, until chicken is tender. About an hour. Remove chicken from broth and cut into small pieces. Remove the bay leaf and skim the fat from the broth. Return to boiling and add carrots and celery and cook on low till tender. Add noodles and cook, covered, for about 10 minutes. Add chicken and parsley. Simmer until heated through, about 5 minutes.
